I can’t find information on whether we can delete messages from Outlook after they are tagged in a matter. Does that tag create a link to the email and therefore, we should not delete the original message?

Thanks for posting your question!
When you associate an email with a matter, a copy of that email is saved to the matter. Once that's done, you can safely delete the original email from Outlook and it will still remain in your matter's documents list.
The email will only be removed from the matter if you delete it manually from the matter or if you disassociate it using the Outlook toolbar.
